This establishment serves wild mushrooms of the geniuses Boletus Edulis, and chantharells. There are public health concerns associated with consuming wild mushrooms, which are not considered from an approved source under the Environmental Improvement Board’s Food Service and Food Processing New Mexico Environmental Department Regulations. Improper identification and handling may result in an adverse impact on the health of individuals consuming these mushrooms, particularly with alcohol. Although the State has granted Cavaliere Carlo Gislimberti a variance from the applicable provision regulations, such variance does not guarantee the safety of consumption.
